Here is the first batch of pickles for the summer of 2011! The cucumbers got planted a little late this year and are growing but won’t be producing any cucumbers until the end of the month. So this first batch was made with cucumbers from the Triad Farmer’s Market here in Greensboro, NC. It takes about 20 pickling sized cucumbers to make a batch of 7 or 8 pint sized jars.

Country Living Magazine had a recipe for some pickle spears from Judith Fertig’s book Heartland in the April 2011 magazine earlier this year. I am going to give that one a try in the next couple of weeks. So stay tuned and I will let you know how they turn out.
I hope to get back to the Farmer’s Market this weekend for some more cucumbers so that I can make another batch and try Judith Fertig’s Heartland recipe. My daughter took two jars back to school with her and the rest are already promised elsewhere to my most dedicated pickle fans. :)

Hubby and I were down that way a couple of weekends ago and visited the farmer's market there. I love that place! Your pickles look delish!
