Chocolate Raspberry Bonbons

All I can say about these is “Wow!  Are these rich!”  These are the Chocolate Raspberry Bonbons that my daughter made the other day when she was home on her Thanksgiving break from school.  I sent her back to school with most of them.  Who wants that kind of temptation in the house so early in the Christmas season?!  :) If you are looking for something rich and delicious and pretty to look at on a plate, these are just thing.  They are bit of work but absolutely worth it!

 Chocolate Raspberry Bonbons

1 package (8 ounces) cream cheese

1 cup milk chocolate chips, melted and cooled

3/4 cup crushed vanilla wafers (about 40 wafers)  We put them in re-sealable freezer bag and crushed them with a rolling pin.

1/4 cup raspberry jam

15 ounces milk chocolate candy coating, chopped

2 squares (1 ounce each) white baking chocolate

In a mixing bowl, beat the cream cheese until fluffy.  Beat in the melted and cooled chocolate chips. Mix in the crushed vanilla wafer crumbs and the raspberry jam.  Cover and refrigerate for 2 hours or until easy to handle.

Shape the mixture into 1 inch balls.   In a microwave safe bowl, melt the candy coating.   Dip the balls in the coating; place on waxed paper lined baking sheets.  Refrigerate until set. 

In a microwave safe bowl, melt the white chocolate; stir until smooth.  Transfer to a re-sealable plastic bag when it is cool enough to handle.  Snip a tiny hole in the corner of the the bag.  Drizzle the white chocolate over the candies.  Store in the refrigerator.  Makes about 4 1/2 dozen.
