Caprese Salad for One

My husband is in either Germany or Belgium tonight and I have nobody else to concern myself with for dinner this evening.  My son is off to another fast food establishment with his friends and his sister is still away at school.  So it’s just me.  And so  for dinner tonight I am having a Caprese Salad for One.  I picked up some gorgeous tomatoes at the Farmer’s Market yesterday (along with some more cucumbers to make another batch of pickles).  And I bought a ball of fresh mozzarella cheese.  I picked a few leaves off the basil plant off of my deck and sliced me up a salad. Some salt and pepper, a drizzle of olive oil, and another drizzle of the Black Cherry Balsamic Vinegar I picked up in Pinehurst as few weeks ago and I have myself one lovely dinner.  Add a glass of Trader Joe’s Petite Sirah and I am a happy girl!

  1. I had a Caprese sandwich yesterday for lunch. It was a box lunch at a meeting I attended but they neglected to bring any balsamic so the taste was so bland.

    Your salad looks much better that what I had yesterday.

  6. Makes my mouth water just looking at it! We are grilling steaks tomorrow night. I think we need caprese salad with the steaks. Perfection!

  7. Beautiful! Yesterday, I had tomatoes for lunch, snack and dinner. Needless to say, that's no way of easing in to tomato-mania at my house. But, how could I resist? A whole bunch were ready like, OVERNIGHT! So, today...I only ate 2 tomatoes...tomorrow 3 and so on and so on!

  8. Love Carprese salad! It's one my family's fave side dishes. This time of year, I can grab the tomatoes and basil from my garden to make it. Now if I just had a cow so I could make my own mozzarella, I'd be in business! :o)

  10. I've had this on my screen for days, just thinking about how good a caprese salad sounded. It was probably one of the worst habits I picked up in Italy. Well, that and house wine. And both sound DELISH right now!
