Sautéed Spinach with Blue Cheese

A new favorite.  Sautéed Spinach With Blue Cheese.  I have been making and eating this for days.  Yes, days.

Sautéed Spinach With Blue Cheese

1 bag of fresh spinach

2 Tbsp. olive oil

1 clove garlic, pressed

salt and pepper

Small piece of blue cheese, crumbled.

Heat the olive oil in a large pan over medium heat.  Add the pressed clove of garlic and Sauté spinach for about 1 minute.  Be very careful not to brown or burn the garlic.  If  you do, throw it out and start over.  Burnt garlic is very bitter.  I know from experience. 

Add the bag of spinach.  It will seem like you can’t get it all in.  Use tongs or a large spoon and move the spinach around in the pan until it wilts down.  You will be amazed at how much it wilts down.  Stir and flip the spinach so that it is nicely coated with the olive oil and garlic.  Add salt and pepper to taste. 

Move to a serving dish.  Sprinkle with crumble blue cheese and serve.    Serves 4. 

Re-heated leftovers are tasty too.

Delicious and healthy.  Go wild and add some chopped walnuts.  I’ll have to save that addition for another day.  I still have braces on my teeth and nuts are a big no no.  And you know how everyone is so afraid of getting caught smiling with spinach on their teeth?  They are afraid with good reason.  I am the poster child for that these days.  Having braces as an adult can be a very humbling experience.  :)
