Candy Cane Brownie Bites

The Christmas Spirit has been lacking around here lately but I think it is finally starting to make an appearance.  I placed my skinny tree in my kitchen for the first time and I have to say that it has helped with my Bah Hum Bug-ness.  :)  I like to collect ornaments that look like candy and food and over the past few years I have placed them on the  skinny tree and kept it in the dining room.  Well, this year I moved it to the kitchen and I love it there.  Especially since I am almost always in the kitchen anyway.  Can you see the pickle ornament in the middle of my tree?  Can you believe that I still don’t have a cheese ornament?!  I need to fix that!  And no tree is complete without a lot of candy canes on it.  Don’t you agree? :)

I made another batch of my favorite quick and easy Brownie Bites.  This time I used crushed candy canes to decorate them.  I love to make Brownie Bites because most people especially women love them because they are so small.   Regular sized brownies don’t always get eaten but no one can say no to a mini bite sized treat like these.

Make a batch of brownies from your favorite mix and ice them with chocolate frosting.  My favorite mix is this made by Betty Crocker and it comes with a Hershey Chocolate frosting pack right in the box.  But if you use a different mix without frosting in it you can simply buy a can of chocolate frosting.

3 Crushed Candy Canes

Bake your Brownies and ice them.  Cut your pan of brownies into squares.  Cut each square in half.  Cut each half in half so that you are reducing each brownie into 4 bite size pieces.   While the frosting is still moist, press some of your crushed candy canes onto the tops.   That’s it.  Very festive, quick and easy!

If you want to take it one step further ,  try melting some white chocolate  (I like Baker’s Premium White Chocolate) in the microwave and then place into a zip-lock sandwich baggie and snip a small hole in the corner of the bag and then drizzle the white chocolate over the brownies.

These are delicious and making them bite sized makes them popular with everyone.

They really don’t last long.  Perfect to take to a Cookie Exchange too.
