Chocolate Raspberry Bonbons

All I can say about these is “Wow!  Are these rich!”  These are the Chocolate Raspberry Bonbons that my daughter made the other day when she was home on her Thanksgiving break from school.  I sent her back to school with most of them.  Who wants that kind of temptation in the house so early in the Christmas season?!  :) If you are looking for something rich and delicious and pretty to look at on a plate, these are just thing.  They are bit of work but absolutely worth it!

 Chocolate Raspberry Bonbons

1 package (8 ounces) cream cheese

1 cup milk chocolate chips, melted and cooled

3/4 cup crushed vanilla wafers (about 40 wafers)  We put them in re-sealable freezer bag and crushed them with a rolling pin.

1/4 cup raspberry jam

15 ounces milk chocolate candy coating, chopped

2 squares (1 ounce each) white baking chocolate

In a mixing bowl, beat the cream cheese until fluffy.  Beat in the melted and cooled chocolate chips. Mix in the crushed vanilla wafer crumbs and the raspberry jam.  Cover and refrigerate for 2 hours or until easy to handle.

Shape the mixture into 1 inch balls.   In a microwave safe bowl, melt the candy coating.   Dip the balls in the coating; place on waxed paper lined baking sheets.  Refrigerate until set. 

In a microwave safe bowl, melt the white chocolate; stir until smooth.  Transfer to a re-sealable plastic bag when it is cool enough to handle.  Snip a tiny hole in the corner of the the bag.  Drizzle the white chocolate over the candies.  Store in the refrigerator.  Makes about 4 1/2 dozen.

You know you are my go to gal for great recipes! This one looks and sounds delicious. My husband LOVES chocolate and loves raspberry so this is going on my list.

Hi....hope you had a great Thanksgiving and I see your gearing up for Christmas goodies...I make candy all the time and have never seen this recipe...I am so going to try these this weekend...they sound fabulous and I just got in the mail today my big box of candy supplies that I ordered.....so let the candy making commence!!

You recipe called for vanilla wafer, do you use a specific brand of wafer? I looked for it in the supermarket but found 2 types of wafers, one type is round shape (in a box..Nilla Mini Wafers) , the other has rectangular shape wafer. I don't know which one to get, please advise.
Also, can I substitude chocolate bar for chocolate candy coating? is there a difference between the two? Thanks for your help! Happy Holidays!

To Pitt02,
I used Nilla Vanilla Wafers and I'm not sure about using the chocolate bar for the coating. Candy coating is made to melt...I've had success melting chocolate chips as well. Go ahead and give it a try. I'm just not sure about how well a candy bar will melt. Good Luck!
