Freezing Corn

Now I am sure there are some people out there who might happen across my blog today and think “Why is she showing us how to freeze corn?  Everybody knows how to do that!”  Well, I’ve never done it before and thought why not give it a try.  It’s got to be healthier for you.  There is less salt and of course the taste is so much better.  So why not give this a try.  And it was easy.  I’ll be making a run to the Farmer’s Market again later this week for some more and I’m going to do it again!  This corn is very tasty.  But I wish I would have done this a few weeks ago when I was able to get Silver Queen corn.  Now that was delicious. 

I followed the directions at this site and it couldn’t have been easier.  Here is the link:  HOW TO FREEZE CORN.  It’s a great How-To tutorial. 

I purchased 12 ears of corn for $3.00 at the Farmer’s Market.  Now that’s a bargain.   I shucked all the husks off and trimmed off any “not so nice” parts.  While doing this I brought a large pot of water to a boil.  I boiled 6 ears of corn at a time to blanch them for 6 minutes.

Then I took them out an placed them in a large bowl of ice water to stop the cooking process. 

I slid my knife down all sides of each cob of corn and cut off all the kernels.

Then I put all of the corn in zip-lock baggies and wrote the date on them with a Sharpie pen and moved them to the freezer. I was able to get six bags with one cup of corn each. 

That’s it.  Yet another thing that is so easy I now wonder why I haven’t been doing this all along!

I've never frozen corn either... I do love the sweetcorn on the cob though and have had it numerous times this summer. Hubby says it's so sweet that "it's almost too sweet". HUH? I say "no way, how can corn be too sweet?"

We have an annual corn roast in the neighborhood and a lot of people order extra in order to freeze it. But they freeze the roasted corn. I think I will try your way.

I've never froze corn either, wish I'd seen this when Target were selling 20 for $1!!!!

Corn on the cob reminds me of two things.

The first is my parents house in northern England where they somehow manage to grow corn despite the freezing weather. We pick it and bbq it in the husks and all our family comes round to eat.

The second is when I went to my Aunts in Ohio. At some point we went to devils lake and we went to a farm (maybe nearby) to pick corn ourselves. I was 5 and it was the first time I had ever had corn on the cob. We sat in the wooden house on the edge of the lake eating.

This post brought back some really happy memories.

We haven't had much of a corn crop here this year, even the corn stands are empty most days. My neighbor did this for me a while back and we went gaga over it. I thought the same, why haven't I been doing this!

Gosh we put up corn every year and love it during the winter months...you will enjoy this also. Soups are so yummy with fresh veggies instead of those nasty cans...yes I eat nasty can corn also but as little as I often can. Enjoy your treats!
