Oreo Cupcakes

We were invited to a Labor Day Cookout today and I am taking my Orzo, Corn, and Chive Salad and I thought I would try making some Oreo Cupcakes that I found while surfing thorough some other blogs this week. The last time I took cupcakes there were none left to take home with me at the end of the night which is a good or a bad thing depending on how you look at it. And it wasn’t just the kids eating them. Some of the adults were “fighting” over the last ones. I’ve learned that at a BBQ, you just can’t go wrong with cupcakes. :)

So the plan is to make a batch of these! Oreo Deliciousness. No fancy recipes. I plan to use a Devil’s Food Chocolate Cake mix, white frosting, and I’ll be using “Double Stuff” Oreos on top.

The 2nd Year College Student came home for a couple of days last night. She has been invited to a “Cocktail” Dance event next Friday so there will be some unplanned dress shopping on the schedule today along with all the cooking and baking. And after only getting about 4 hours of sleep last night, I’d like to squeeze in a nap sometime. It’s a pretty aggressive agenda I know. ;) But I think I can do it! Happy Labor Day!!

I came back and edited this post today to add photos of how my cupcakes turned out. These are mine in the polka dot cupcake cups. The cups cost a bit more but they they are foil lined and so the decorative outside of the cup stays vibrant and doesn’t get that see through look. And they tasted as good as they look!

Enjoy having your student home with you. I'm looking forward to mine coming home in a few weeks for fall break.
