I made these today after the guilt set in for not buying any candy for Easter this year.   That’s right.  Not a single chocolate bunny, marshmallow egg, peanut butter cup, jelly bean, or peep.  The family all told me not to buy it this year and the one time I actually listen and do what they ask, everybody has a long face and is poking around the kitchen looking for treats.  These got me off the hook but I think next year I’ll have to invest in a chocolate bunny or two. 

These will cure any cravings for chocolate you might have and they are delicious.

Chocolate Cookies with White Chocolate Chips. 

1 cup butter

1 cup brown sugar

1 cup sugar

2 tsp. vanilla

2 large eggs

2/3 cup cocoa

2 cups all purpose flour

1 tsp. baking soda

1 tsp. salt

1 bag white chocolate chips

Cream the butter and the sugars until light and fluffy.  Add vanilla and the eggs and mix well.  Add the flour, cocoa, baking soda, and salt and mix on low until just combined.  Do not over mix.  Fold in the white chocolate chips.   

I like to use a big cookie scoop for jumbo size cookies. (You could also use an ice cream scoop or a large rounded tablespoon.)  Line your cookie sheets with aluminum foil and drop the cookies onto the sheet and bake at 350 degrees for 15 minutes.  Cool slightly and transfer to a cookie cooling rack to cool completely.    Enjoy.

Someday you'll learn that when we say, "No Mom, don't buy any of that. I'm on a diet." what we really mean is, "Go ahead and get it because I'm going to allow myself one cheat day. But you're never going to know about it because I'm going to complain the whole day that you're ruining my figure with all of the candy. But secretly, I'm going to be joyous and sugar-rushed." So..you'll know for next year. ;-D

I just ate a whole bunch of Robin's Eggs and wish I hadn't but they are my downfall when Easter rolls around. I have one bag left but am gonna give them away so I can get them out of the house. :) I just saw your apple caramel cheesecake recipe. Oh my! Have a great week. Tammy

We didn't buy any candy this year either. These cookies look delicious. I bet they would be delicious with vanilla ice cream sandwiched between two of them.

What a coincidence! I made chocolate drop cookies for Easter too! But I also went ahead and but loads of Easter candy. I can't make it through Easter without it, so props to you! xx
