Nacho Mama’s Nachos

Yesterday I was chatting on the phone with my daughter who is away at school taking a summer session class.   She said she was thinking about making dinner for a guy she’s been dating and wanted to know how to make nachos.  I was more than happy to share my vast nacho expertise with her.  I rattled the recipe off the top of my head and we went over every detail on how to make them while she took notes.  “And don’t forget the “Texas Pete” Hot Sauce when you serve them.”  She assured me she already had a bottle. 

Later in the evening as I was drifting off to sleep, I tried to remember the first thing I ever cooked for my husband when we were dating and for the life of me I couldn’t remember.   It was then that I realized with a start that I forgot to include one of the most important ingredients for the nacho recipe that I shared. I forgot to mention to add a packet of Old El Paso Taco Seasoning Mix after she browned the hamburger!  Too late.

The next morning I found a text on my cell phone from her stating that she “did it and didn’t burn them!”.   Not a word about how they tasted.   I quickly texted her back to apologize for forgetting to tell her about the Taco Seasoning Mix.  She very sweetly replied….”Oh, I was wondering why they were so bland!  Not at all like I remember.  It’s okay though, we used a lot of salsa and sour cream to help make them taste good.  I won’t forget the seasoning packet next time”. :)

I think it might be time to buy the girl a cookbook.  Her Mom’s brain has been picked a few too many times and it’s too risky to rely on it when it comes to impressing her dates!

And do you have any good beginner cookbook recommendations?   The recipe file in my head can’t be trusted! :)

Now I want Nachos! I don't remember any firsts that I made but I remember my husband made me spaghetti on our first date.

I made fudge.. ha ha. Those nachos look yummy. I bet there must be beginner cookbooks, nothing to complicated. Such a cute post. xo

Hubby's daughter asked for his salsa recipe a seven years ago... I typed it up in an e-mail and sent it off to her. I saved the e-mail and thank goodness, because this past week-end Hubby was looking for it so he could whip up a batch. Could not find a hard copy of the recipe, but OOOH, "wait", I said.... "I have it in an old e-mail that I saved". So I printed a copy for him.

There is no way I can remember what I made my hubby the first time I cooked for him...way too long ago. With my cooking skills it was probably a frozen pizza :-)

Looks good, but it you REALLY want to go for the burn, add some Dave's Insanity Sauce. That'll fix you right up. ;-)

I don't recall what I first fixed for a date but I have 500 cookbooks, most which I've barely used. I've acquired them in my travels about the world. I'm forever snipped magazine recipes and, many, I've been using nearly fifty years. I don't cook much anymore, though....just for me, it's better to keep it simple.

I made pork chops and once he knew that I could cook, I had him:) I would buy her a Paula Deen cookbook. She just cooks great southern food. It isn't hard to make either.

Maybe you could MAKE her a cookbook of favorite family recipes. Kind of like a scrapbooking thing.

I used to make lasagna, my specialty at the time, with garlic bread and corn. I think every guy I dated had that as a first dinner! LOL!
